AIP Biscuit & Sausage...
…that even my husband will eat! It has been about 4 years since I have been on the AIP diet and since I have made these “Pigs in a Basket” breakfast sausages. I just made up a batch this morning and my husband grabbed a couple right out of the oven. Like most AIP recipes it is best when first served but these can be refrigerated for several days, which is great to have a breakfast that you just need to heat up. I team this up with green juice and ginger shot for a great breakfast.
I found this breakfast through a collection of recipes from different authors called “85 amazing AIP breakfasts” edited by Eileen Laird. (Click Here) I also found the plantain waffle recipe and chicken breakfast sausage recipe in this collection.
I found useing a very small scooper yields 24 sausages and biscuits perfectly. Her instructions says to push the sausages down into the biscuit dough, but mine never did “sink” in, the dough was too firm to have it rise up around the sausages. This time I put the pan with the dough and sausages in the oven for a few minutes which made the dough softer and then I was able to push the sausages down into the dough. This makes the dough thinner and more around the sausage opposed to what I was doing before where the sausage was literally sitting on top of the dough.
