Cooking Oils...which ones to use?
I grew up with my mom using vegetable oil….Wesson Oil to be exact, as a lot of people my age. However, research now shows this is not a healthy fat for us. I was going to breakdown the various cooking oils between the good, bad and ugly but it does get quite scientific and I think it’s best to keep the science to the ones who know what they are talking about. I recommend reading Chris Kresser’s “Healthy Fats: What You Need To Know”
FYI: As you go through the healing process you may find out you are allergic to some foods and soy maybe one of them. I didn’t realize this but some vegetable oils are a mixture of different veggies including soy. My youngest daughter informed me of this as at age 24 she suddenly became allergic to soy.
For the last 3-4 years I strictly only used organic olive oil and organic unrefined coconut oil for cooking. (You lose the health benefits when you use refined coconut oil). It has only been this past year that I have started using canola oil for baking. Although baking is something I enjoy doing (and eating!) it is not something I do often. But when I do it’s been nice to not have the coconut flavor in some of my baked goods.
