Putting Veggies into your breakfast

My oldest daughter who also has autoimmune disease (Celiac and Endometriosis) is creative in adding veggies into a standard breakfast. She sent me this photo of where she made oatmeal (be sure to use organic and gluten free) as the base and placed sauteed greens on top with chopped up avocado and two poached eggs. A little hot sauce on the eggs and she has added a lot of nutrition to her morning oatmeal.

Breakfasts are one of the harder meals to incorporate vegetables in. How do you go from french toast with syrup to something vegetable based . . .and like it! Check out the Soccata recipe by Gwenyth Paltrow, it’s a good place to start.
