Breakfast Soccata
It was on a whim that I bought Gwyneth Paltrow’s “The Clean Plate” Cookbook. I discovered a few recipes that have become staples in my meal planning. I never heard of a soccata but I think of it as a vegetable version of hash browns. There are three versions and I like all three:
-cauliflower, pea and tumeric, (this one takes the longest as you need to steam the cauliflower)
-kale kuku, and
-zucchini & lemon…ok, I like them all but I like this one the most!
What makes it delicious is to top them off with a half of avocado and a scoop of her lemony garlic aquafaba sauce which you can find on page 179 of her cookbook. You first have to start off making her aquafaba mayo and then can proceed to make the lemony garlic sauce. I usually half the recipe as it makes quite a bit and sunflower seed oil is expensive.
Gwyneth has put the cauliflower, pea and tumeric soccata recipe on line, (Click Here) I would recommend trying it first with the avocado to make sure you love it and then buy her cookbook to get the other two recipes and the recipe for the lemony garlic aquafaba sauce. Enjoy!
