I learned about Plantain Waffles when I was on the AIP Diet for 7 months and it was one of my “highlight” meals. I liked it because it was one of the few meals that actually tasted similar to the real thing. Since dairy and syrup is a no-no, I place organic blueberries in each little nook so I get a berry in every bite! I purchased the recipe through the Paleo Mom’s website (she has a whole library of recipes for the AIP diet). It is an AIP recipe book for $12.95 with 85 recipes….I would highly recommend it just for the plantain waffle recipe! Update: I am no longer finding this recipe on the internet. They are called “Plantain Waffles” by Mary of Simple and Merry. I have included the recipe down below.

I almost forgot I like to add a teaspoon of vanilla to the batter…I don’t believe that is AIP approved but something you can add once your are off the AIP diet. Also, it is important that the plantains are solid green. I have fudge a bit and it does make a difference in the texture and success of the recipe.

Ingredients:

  • 4 cups green plantains, peeled and chopped (about 3)

  • 1/3 cup melted coconut oil

  • 1 cup water (you may need to add more)

  • 2 teaspoons gelatin

  • 1 teaspoon sea salt

  • 1/2 cup arrowroot starch

  • 1 teaspoon of vanilla

  1. Place all ingredients in a high speed blender.

  2. Turn on and push ingredients down with the tamper until it is uniform and smooth. If you need to add a bit more water, you can do so. You want the batter to be thick, but pourable.

  3. Heat your waffle iron, coat with coconut oil, and cook per instructions.

  4. Serve immediately.
