Best Ginger Shots!
I love, love my ginger shots, they are delicious. That is saying a lot because up to two years ago I did not like the taste of ginger…very foreign flavor for this girl who was raised by parents from Nebraska! (Think beef, potatoes and corn)
I had been reading about how ginger is one of the best things to bring down inflammation and the new trend was ginger shots. To spicy for my taste but I was determined to decrease my autoimmune symptoms so I started doing ginger shots and diluting it with a lot of water. Then a magical thing happened…we were traveling in Iceland and we found a place that offered green juicing (what a treat!) and ginger shots. I was so delighted to discovered they diluted the ginger juice in fresh apple juice…it was so yummy! Then the magic continued…we were traveling in Oregon and to my delight this little coffee shop sprinkled a little nutmeg and cinnamon on top of their ginger juice mixed with apple juice. (fyi: nutmeg and cinnamon is not AIP approved) Now that was super delish! So now I love ginger. It’s a process :-)
My ginger shots have a pink coloring to them as I do not clean out my juicer after I green juice. Since beets are the last thing I juice, the red juice gets into my ginger shots. I continue to do it this way as it makes the ginger shots look yummy opposed to the beige color they would normally be.
